Immune Boosting Lentil Soup

Ingredients:

  • ½ cup lentils

  • 1 cup finely chopped *broccoli

  • 4 cups water

  • 2 cloves chopped garlic

  • 4 tbsp dried *basil

  • 1 tbsp curry powder

  • 1 tbsp onion powder

  • 1/2 tsp dried *oregano

  • ½ cup chopped *bell peppers

  • ½ cup diced red onions

  • Pinch Cayenne pepper

  • 1Tbsp olive oil

    Immune boosting ingredients:

  • ½ cup sliced shiitake mushrooms

  • astragalus sticks

    Optional to taste:

  • ½ tsp salt,

  • lime slices

*organic preferred

 

Directions:

  • Bring water, lentils and basil, oregano, curry powder and cayenne pepper to a boil.

  • Simmer on low heat for 1.5 hrs.

  • Add additional boiling water as needed if lentils are drying.

  • After 1hr of simmering, in a separate pan on medium heat, saute mushroom, peppers, onions, broccoli and garlic with olive oil in the following order:

    • Mushrooms (long enough to remove water)

    • Onions and peppers

    • Broccoli and garlic

  • Add saucepan ingredients to pot containing simmering seasoned lentils

  • Add astragalus stick to soup

  • Optional: Add salt

  • Simmer for another 15 minutes.

  • Serve in bowl with limes slices. Use lime slices for additional salt like taste
