Immune Boosting Lentil Soup
Ingredients:
½ cup lentils
1 cup finely chopped *broccoli
4 cups water
2 cloves chopped garlic
4 tbsp dried *basil
1 tbsp curry powder
1 tbsp onion powder
1/2 tsp dried *oregano
½ cup chopped *bell peppers
½ cup diced red onions
Pinch Cayenne pepper
1Tbsp olive oil
Immune boosting ingredients:
½ cup sliced shiitake mushrooms
astragalus sticks
Optional to taste:
½ tsp salt,
lime slices
*organic preferred
Directions:
Bring water, lentils and basil, oregano, curry powder and cayenne pepper to a boil.
Simmer on low heat for 1.5 hrs.
Add additional boiling water as needed if lentils are drying.
After 1hr of simmering, in a separate pan on medium heat, saute mushroom, peppers, onions, broccoli and garlic with olive oil in the following order:
Mushrooms (long enough to remove water)
Onions and peppers
Broccoli and garlic
Add saucepan ingredients to pot containing simmering seasoned lentils
Add astragalus stick to soup
Optional: Add salt
Simmer for another 15 minutes.
Serve in bowl with limes slices. Use lime slices for additional salt like taste
